In the northernmost populated area within the Arctic Circle, Benjamin Vidmar is aiming for the unthinkable. In complete darkness for three whole months each year, the American chef is growing fresh vegetables for the Spitsbergen community. To achieve this ambitious goal, Vidmar built a special domed-shaped greenhouse and developed his own composting system. His mission is to provide locally sourced food for the Spitsbergen community and develop global solutions for food production and sustainable waste disposal systems in the process.
Experienced in cooking from all around the world, Vidmar has his sights set on opening his own restaurant – one that will operate without producing any waste. Watch Axel Rowholt’s thought-provoking documentary as he explores Vidmar’s journey to transform the art of cooking and make a positive impact on the world.
